Corn and Chicken Salad with Yellow Pepper Dressing

Ingredients

  • 1 medium yellow bell pepper, seeded and cut up
  • ½ cup bottled balsamic vinaigrette
  • 6 slices bacon, diced
  • 3 large ears Supersweet corn, shucked and quartered crosswise
  • ½ cup sliced celery
  • 3 cups cut-up cooked chicken
  • 3 tablespoons sliced green onion

In a blender container combine pepper and dressing; whirl until smooth.  In a large skillet, cook bacon until crisp; drain on paper towels and discard oil.  Add half cup water to skillet and bring to a boil.  Add corn, cover and cook 4 minutes.  Add celery and stir 30 seconds.  Drain well and cool.  In a bowl, toss chicken, celery and green onions with ½ cup dressing.  Transfer to serving platter.  In same bowl, toss greens and corn with the remaining dressing.  Add to platter and sprinkle with bacon.

YIELD: 4 servings
